Under the guidance of chef Yohei Furuhashi—formerly of the River Café and Toklas—the kitchen presents a seasonal menu that marries Mediterranean flavours with Scottish ingredients, such as produce from Balcaskie Estate. Guests can savour dishes like Scottish scallops with cime di rapa and tomato, or monkfish with alubia beans and mojo verde, all complemented by a well-curated European wine list. Critics have lauded The Lavery for its harmonious blend of setting and cuisine.
